It was then partly destroyed in a 15th century siege, before much of the current façade and interiors were established in the 18th century.

Located within a historic room where cardinals and popes once dined, Le Restaurant offers four, six, or eight-course tasting menus that explore the strong local flavors of Provence. La Salle à Manger is the hotel’s secondary restaurant, offering light and relaxed a la carte lunch and dinner menus. In the medieval part of La Mirande, hides the treasure of the hotel: the old kitchen of the Pamard family. Equipped with a wood-burning stove dating from the 19th century, the chef prepares a unique menu from the market for up to twelve guests at the large sycamore wood table. La Table Haute, The Chef’s Table guarantees a friendly atmosphere and delcious cuisine. This kitchen is also the setting for the cooking school - Le Marmiton. Local gourmands and hotel residents, young and old, enjoy these fun moments where tricks of the trade and cooking secrets are passed on in a place steeped in history.
